Mahogany Pork Chops (serves 4)

4 top loin pork chops
6 T. teriyaki sauce
2 T. molasses (or ketchup)

Season chops with salt & pepper

Grill over medium-high heat, basting with teriyaki & molasses.


Grandma Mohlke’s Pork Cutlets
(From: Prairie Pride Farm)

¾ cup flour
½ T. pepper
2 T. salt or seasoned salt
1 pound Country Cutlets (works with Steaks or Chops too)

Combine flour, pepper and salt in a 1 gallon ziplock bag. Add meat a few pieces at a time and shake in bag until well covered. Brown in pan with butter or oil, over medium-high heat. To kick 'em up a notch, sprinkle a little Louisiana hot sauce on the cutlets before placing in the bag for shaking.


Thousand Hills Cattle Co. Carne Asada (marinated beef for fajitas)

½ bunch cilantro, chopped
The juice of 4 limes
1 tsp cumin
1 tsp granulated garlic or garlic powder
1 tsp paprika
4 cloves garlic, peeled and chopped
3-4 lb 100% grass-fed beef skirt steak, trimmed (remove any silverskin and fat)

Place ingredients in a sealed container. Marinate in the refrigerator from 20 mins to 8 hrs, turning regularly. Remove meat and place on heated broiler or grill. Cook to medium rare, slice thinly and serve. Accompany with your favorite fresh Minnesota Grown fajita toppings such as grilled onion, tomato and sautéed pepper. Add avocado and roll in a warm tortilla.


Pineapple Honey Glazed Ham
(From: National Honey Board)

1 fully cooked boneless ham (4 - 5 lb.)
1 can (8 oz.) pineapple slices
1/3 cup Minnesota Grown honey!
1 Tablespoon ground mustard
Dash ground cloves

Bake (Minnesota) ham on rack in shallow baking pan at 325oF for 1 hour or to 120 oF on meat thermometer. Drain pineapple; reserve liquid. Combine reserve liquid, honey, mustard and clove; mix well. Score top of ham, if desired, and arrange pineapple slices on top. Generously brush honey mixture over entire surface. Bake about 30 . 45 minutes longer or to 165 oF on meat thermometer; baste every 10 minutes. Let stand 10 . 15 minutes before slicing. Makes 12 16 servings. Note: Honey should not be fed to infants under one year of age.
